Black beans and rice

Introduction

For those of us who aren't so found of canned or frozen corn I eliminated it as most beans and rice call for corn. For those of us who aren't so found of canned or frozen corn I eliminated it as most beans and rice call for corn.
Number of Servings: 6

Ingredients

    1 cup brown rice (uncooked)
    16 oz jar salsa
    15 oz can black beans
    14.5 oz can diced tomatoes
    1 cup diced celery
    1/2 cup chopped green pepper
    1/2 cup chopped onion
    1 tsp cumin powder
    1 tsp garlic powder
    Tbs olive oil
    12 oz water

Directions

lightly saute the onion, green pepper, celery in olive oil, mix the rice with other ingredients as well as spices. pour sauted mixture in a 13 x 9 in. baking dish, cover tightly with foil, bake at 375 for about 1.25 hours or until rice is cooked.
