Introduction

I redid the recipe because I'm allergic to tomatoes and I'm gluten free. It was an easy one to remake! I love the La Victoria Salsa since it is one of the few salsa's without any tomatoes that I can find. I redid the recipe because I'm allergic to tomatoes and I'm gluten free. Number of Servings: 4

Ingredients

    4 corn tortillas
    2 cups White Beans (I use cans), drained and rinsed
    1 cup green salsa
    1/2 cup shredded reduced-fat Cheddar

Directions

Preheat the oven to 375 degrees Fahrenheit.
Place the pinto beans in a bowl, add the salsa and mash with a fork until well combined.
Place tortillas on a baking sheet, and place in oven for five minutes, until slightly crispy. Remove from oven and divide bean-salsa mixture among the tortillas. Top with cheese, and return to the oven until beans are heated and cheese is melted, about five minutes.
Serve immediately.
