Pumpkin Ricotta Cheesecakes

Introduction

Had extra pumpkin and ricotta so thought I would throw this together to see what it would taste like. Had extra pumpkin and ricotta so thought I would throw this together to see what it would taste like.
Number of Servings: 4

Ingredients

    1/2 cup pumpkin
    1 large egg
    1 1/2 cups ricotta cheese (Light)
    1/4 cup whole sour cream
    1 Tbls Agave Nectar
    about 1/8 tsp pumpkin pie spice (or as much as you need for your tastes)

Directions

Mix all ingredients together, pour evenly into large muffin tins and bake 350 degrees for 30 minutes.

Serving Size: 4 large muffin cups
