Introduction

I made this because I can't eat salsa because of the salt and heat. You may want to use a spicier salsa if you like the heat but can't have the salt. It's kind of chunky to use with chips, but I love putting it on top a bed of greens. I made this because I can't eat salsa because of the salt and heat. Number of Servings: 5

Ingredients

    6 oz. Mori-nu Silken Light Firm Tofu

    .5 cup diced tomatoe

    .5 cup diced sweet red bell pepper

    .5 cup diced zucchini

    .5 cup corn (I steamed a cob and cut off some kernels

    .5 cup Pace Chunky Salsa (I used Mild)

Directions

I smashed half the tofu with a fork, and used a 1 cup food processor for the other half. I like the creamy texture of the processed tofu better.

steam corn on cob or cook frozen corn and set aside to cool

remove seeds and center from tomatoe

Dice veges

slice corn off cob up to 1/2 cup

Place all ingredients into a medium container and stir well.

Place contents in 2.5 cup air tight container and refrigerate to let flavors mingle. I used 4 hrs for this.

Place in bowl and serve with toasted pita chips and salad

Serving Size: Makes 5, 1/2-cup servings
