Deborah's CHICKEN FAJITAS

Ingredients

8 ounces chicken breast, slice thinly
1 tsp ground cumin
1/4 tsp oregano, Mexican preferred
1 tsp chili powder, ancho if you can find it
Juice of one lime
1 Tbsp chopped garlic
2 cups thinly sliced onion
2 cups thinly sliced green pepper
1 tsp canola oil
4 10" Ancient grain tortillas
1/2 cup fat reduced sour cream
Directions
Marinate chicken in cumin, oregano, chili powder and lime juice for at least 20 minutes, but not more than 8 hours.
Heat a large fry pan or wok. Add oil and marinaded chicken. Cook until no longer pink. Add garlic, cook for one minute.
Add onion and green pepper slices. Cook until tender crisp. Remove from heat.
Divide chicken mixture into 8 and place on the tortillas. Add 1 Tbsp of sour cream. Roll and serve.
Serving Size: Makes 8 Tortillas
