2 egg whites
2 tbsp butter (one for each skillet, I use two small skillets to make sure I flip my omelet perfectly).
2 tbsp Mushrooms, chopped
1 tbsp Red onions
2 tbsp bell peppers (red, green and yellow chopped and mixed)
Baby Spinach (maybe 10 leaves)
1/3 c Italian style cheese, Great Value Finely Shreeded
1 tbsp Tostitos chunky salsa, medium
Add the vegetables to the melted butter in the first skillet
Pour egg mixture in sauteed vegetables
Cook until done on one side
Put the second skillet on the eye to heat
Flip egg mixture into the second skillet
Sprinkle the cheese over the mixture
Pour omelet into plate, bending in half
Spread salsa over egg.
