Poppy Seed Chicken

Ingredients

1 1/2 lbs. boneless, skinless chicken breast
10.75 oz. can of 98% Fat Free Cream of Mushroom Soup
8 oz. fat free sour cream
1 Tbsp. poppy seeds
Topping:
10 reduced fat Ritz crackers
2 Tbsp. I Can't Believe It's Not Butter Light, melted
1 Tbsp. poppy seeds
Directions
Cut chicken into bite size pieces. Boil in water until no longer pink in the center (about 10 minutes). Drain and set aside.
Preheat oven to 350 degrees. Spray a 2 quart casserole dish with nonstick cooking spray. Spread chicken on the bottom the prepared dish.
In a bowl, mix together soup, sour cream and poppy seeds. Pour over chicken.
Crush the Ritz crackers. Combine them with the melted butter and poppy seeds. Sprinkle over soup mixture.
Bake for 30 minutes.
Serving Size: 4 servings.
