Introduction

i made this with purple cauliflower from the farmers market. so tasty! i made this with purple cauliflower from the farmers market. so tasty!

Ingredients

    2 medium heads cauliflower (i used purple)
    1/2 cup 2% milk
    1 tbsp butter
    1/2 tsp salt
    dash of black pepper

Directions

remove the leaves from the cauliflower and cut into florets. add to boiling water and simmer until very soft--about 20 minutes. drain. add the rest of the ingredients to the warm pan and stir. add the drained cauliflower. mash with a potato masher. if desired, use an immersion blender for a smoother texture.

Serving Size: makes 6 generous 1/2 cup servings
