Introduction

Number of Servings: 5

Ingredients

    3 large, firm apples, in chunks
    juice from 2 lemons
    2 mandarin oranges chopped
    1 stalk celery, chopped
    1/4 cup raisins or currants
    1/2 cup cashews, toasted

    1 cup (1%) yogurt
    1 small, ripe avocado (1 cup mashed)
    1/2 tsp lemon rind
    3 T. honey (or to taste)

Directions

Soak apples in juice of 1 lemon. Add mandarins, celery, raisins, & cashews.
Puree remaining ingredients, including juice of second lemon, in a food processor. Add to salad and toss.

Serving Size: makes 5 1-cup servings
