Creamy Tomato & Shrimp Penne

Ingredients

2 c. uncooked penne pasta
1 lb. cooked shrimp
1 t. minced garlic
2 T. olive oil
1/2 t. red pepper flakes
1 can diced tomatoes, UNDRAINED
1 pkg Knorr Alfredo Sauce
1 3/4 c. non-fat milk
1/4 t. salt
1/8 t. freshly ground black pepper
Italian seasoning, oregano, basil, etc. if desired
Parsley for garnish, if desired
Directions
Cook pasta according to package directions. While pasta is cooking, prepare the sauce.
In a small saucepan, combine Knorr Alfredo Sauce and milk. Prepare according to package directions (low-fat directions less the butter). Set aside.
Saute shrimp in olive oil with garlic and red pepper. If using cooked shrimp, DO NOT OVERCOOK. Add alfredo sauce and diced tomatoes. Season with salt and black pepper. If desired, add Italian seasoning, basil, oregano, etc.
When pasta is finished cooking, drain and rinse well with very hot water. Serve immediately.
Serving Size: 3/4 c. pasta with 1 c. shrimp and sauce
