Ham & Bean Soup

Ingredients

Ham - You choose the amount. We use leftovers
Pinto Beans - 2 cans
Great Northern Beans - 2 cans
Navy Beans - 1 can
Canned Tomatoes (diced or crushed) - 1 can
White Potatoes - 8 medium
Celery - 3 stalks
Onion - 1 small/medium
Basil
Parsley
Salt
Pepper
Water - 6 quarts
Directions
Cut ham into bite size pieces.
Add ham and water to a large stock pot.
Bring to a boil over high heat.
Boil ham for 15 minutes to form broth.
Dice onions and celery and add to broth.
Add basil, parsley, salt and pepper.
Peel and finely chop 3 of the 8 potatoes. Add to broth.
Rinse and add all beans.
Add tomatoes.
Boil for one hour.
Peel and cube the five remaining potatoes.
Add to soup and boil for an additional 30 minutes.
Serving Size: Makes 15-20 1 cup servings
