Easy Vegetarian Barley SoupSubmitted by: CARLASKIS
1/2 c. pearl barley
6 c. water
1 vegan vegetable Bouillon cube (10g)
5 medium potatoes, peeled & cubed
6 oz. package baby spinach
1 lg. carrot, shredded
1/2 t. red pepper flakes
1 t. dried thyme
1 t. salt
1/2 t. black pepper
1/4 c. plain light soymilk
Bring water with bouillon cube to a boil. Add potatoes, cooking until soft, approximately 15-20 minutes. With an immersion blender, blend until about 1/2 of the mixture is pureed. Add shredded carrot, spinach, thyme, red pepper flakes, salt, & pepper. Cook until vegetables soften, about 5 minutes. Mix in the cooked barley. Mix in soymilk just before serving.
