Introduction

A quick protein packed make ahead breakfast for those busy work days. A quick protein packed make ahead breakfast for those busy work days.
Number of Servings: 8

Ingredients

    5 large eggs
    Non fat milk 2 tablespoons
    1 cup chopped cherry tomatoes
    3 oz extra lean ham chopped small
    .5 cup fat free shredded cheese of choice
    1 cup chopped broccoli
    2 Tablespoons chopped onion

Directions

Mix eggs and milk in a bowl. Add shredded cheese, ham and chopped vegetables. Season with salt and pepper.
Spoon mixture into muffin tins coated with cooking spray.
Baked at 350 degrees for about 20 minutes or until "set" and golden on top.

Refrigerate and pop in microwave for 30-40 seconds and serve

Serving Size: Makes 8 muffin sized fritatta's
