Introduction

It's close to Thanksgiving and I'm craving some pumpkin cheesecake. You can use any unflavored protein powder in this recipe, 2 or 3 scoops. It shouldn't matter. Ingredients

    1 8oz pkg Kraft 1/3 fat cream cheese
    1/2 cup 2% cottage cheese
    1/2 cup Libby's pure pumpkin
    1/2 to 3/4 cup splenda
    3 scoops unflavored protein powder (nutritional info is for Bariatric Advantage High Protein Meal Replacement)
    1 egg
    1.5 Tbsp pumpkin pie spice

Directions

Preheat oven to 375 degrees.

Mix everything together with a hand mixer. Pour into a lightly greased pie plate. Cook for 40-50 minutes until it no longer jiggles.

Serving Size: Makes 8 slices
