Spiced pumpkin mini muffins

Ingredients

    White wheat flour all-purpose 1.5 cup
    Old Fashioned Oatmeal- .75 cups, ground to flour
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Salt, .25 tsp
    Cinnamon, ground, 1 tbsp
    Pumpkin Pie spice, 1 tbsp

    Pumpkin, canned, 1 15oz can
    Molasses, 2 tbsp
    Honey, 2 tbsp
    Agave, organic 4 tbsp
    Egg, fresh, 1 large
    egg white, fresh, 2 large
    Applesauce, unsweetened, .25 cup
    Nonfat Plain Greek Yogurt, .5 cup

    Granulated Sugar, 2 tsp

Directions

In food processor, blend up oatmeal. Add to bowl with other dry ingredients, and mix well. In a separate bowl, mix wet ingredients. Combine, but do not over mix.
Add by tablespoons to a lined and sprayed mini muffin tin. Dust tops with sugar. Bake @ 400F for 15 minutes.
