Maroccan Carrot Pineapple Salad

Ingredients

    340 grams Carrots (cut into a julienne)
    1/2 Cups Crushed pineapple in Pineapple juice (no sugar added)
    1 Orange
    Juice from Freshly squeezed orange
    1 Large Lemon, juiced
    1 Teaspoon Freshly grated ginger
    1/2 Teaspoon Kosher salt
    1/4 Teaspoon Crushed red pepper flakes
    1 Teaspoon Ground cinnamon

    (2 Tablespoons Toasted almonds- optional, not in calculation)

Tips

For a creamy salad, add fat free plain yogurt (not in calculation)


Directions

Combine carrots with the pineapple and orange segments in a large bowl.

In a small bowl, mix the orange juice, lemon juice, ginger, salt and red pepper flakes. Pour the juice mixture over the carrots and pineapples. Add the meat of the orange (finely chopped) to the salad. Cover and refrigerate for 1 hour.

To serve: Sprinkle with cinnamon (and garnish with almonds before serving- optional).
