3 c. dried black beans 10 c. water 1/4 dried minced onion 2 (.87 oz.) packages brown gravy mix 2 (1.25 oz.) packages chili seasoning, 30% less sodium 1/2 dried parsley flakes 2 (10 oz.) cans Rotel tomatoes with green chilies
Rinse beans and place in a microwave safe dish. Cover with water, 1 to 2 inches over top of peas. Cover dish loosely with plastic wrap and microwave on high for 15 minutes, rotating after 7 minutes. Drain and rinse beans very well. Place beanss in a large soup pot. Add water, seasonings and tomatoes. Cover, bring to a boil. Lower heat, cover and simmer for about 90 minutes or until peas are tender. Stir occasionally while the soup simmers.
