Ingredients

1 3 oz. box Orange flavored gelatin mix
32 oz. fat free cottage cheese
1/2 c. chopped pecans
1 20 oz. can crushed pineapple, drained
1 15 oz. can mandarin oranges, drained
1 8 oz. tub cool whip lite
Tips
This can be further lightened (though I am not sure on calorie specifics) by using sugar free gelatin mix and fat free cool whip. I can't tolerate most fake sugars so I use this as a compromise!
Directions
Mix cottage cheese with gelatin. Add in oranges (break segments in half if desired), nuts, pineapple. Mix. Fold in cool whip lite. Chill and serve.

I'd like to try this but I am not sure if the jello should be prepared or if the powder is just mixed with the cottage cheese? - 11/23/11

Just sprinkle in the powder--it is used mostly for flavor, but after chilling it also helps the salad firm up. No need for water!
