Chocolate Cupcakes

Ingredients

    1/4 c butter, softened
    2 1/4 c sugar
    3 eggs
    1 tsp vanilla
    1 1/2 c skim milk
    2 c flour
    1/4 tsp baking soda
    1 tbsp baking powder
    1 cup + 2 tbsps cocoa powder
    1/8 tsp salt

Directions

Preheat oven to 350. Line cupcake pan with paper liners. In a large bowl, cream butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Sift together flour, baking powder, baking soda, cocoa and salt. Add flour mixture and milk alternatively into the batter; beat well. Fill the cupcakes 3/4 full. Bake for 17 to 22 minutes. Makes 24 cupcakes.
