4 Stop&Shop Light English Muddins
4 Slices Kraft Free American Cheese
4 Slices Jones Farm Fresh and Tender Ham
1/4 cup Simply Smart Milk.
3 large eggs
Directions
Break 3 large eggs into a large mixing bowl.
Add 1/4 cup Simply Smart 1% milk and set aside.
Toast 4 Stop & Shop Light English Muffins (Or your local 90 calorie equivalent).
Whisk egg and milk mixture until it increases slightly in volume. Pour mixture into the cups of a poaching pan and poach. Eggs will expand and double in size, looking almost as if they are flowering. Place a slice of ham on the bottom half of each english muffin. Gently scoop each egg round from the poaching cups and place on the ham slices. Cover with cheese slice and top with the other half of the muffin. These are tasty, low calorie, and portable.
