Curried Lentil & Coconut Soup

Introduction

Number of Servings: 4

Ingredients

    2 cups dried lentils
    .5 cup grated carrot
    .5 cup coconut flakes
    .25 cup dried minced onion
    3 tbsp curry powder
    2 tbsp dried parsley
    1 tsp ground ginger
    .5 tsp black pepper
    1 garlic clove, minced
    salt to taste

    1 tbsp oil
    4 cups chicken broth (one container)
    4 cups water

Tips

Adjust seasoning to taste. Reducing amount of broth and salt will lower sodium.


Directions

Combine all dry ingredients in a mixing bowl.

Heat oil in a large saucepan and saute garlic. Add dry ingredients and stir for one minute to coat lentils. Add broth and water.

Bring to a boil, then reduce heat to low. Let cook uncovered for 25 minutes, or until lentils are tender.

Serving Size: makes four large bowls
