Herbed Chicken Noodle Soup

Introduction

Number of Servings: 12

Ingredients

    16 oz. pkg. fresh chicken breast tenderloin
    6 medium red potatoes, diced (I leave skin on)
    12 baby carrots, sliced into small coins
    1 stalk celery, diced
    1/2 medium onion, diced
    2 garlic cloves, peeled and chopped
    1 tbsp each of fresh rosemary, thyme, and sage (chopped)
    6-7 cups water, divided
    salt and pepper to taste
    1/2 package No Yolks noodles


Directions

Add chicken, potatoes, carrots, celery, onion, garlic, herbs, and salt/pepper to crockpot. Add 4 cups of water. Cook on high for 4 hours or low for 8 hours. Stir occasionally to break up the chicken. By the time the soup is finished, chicken will fall apart easily using a fork.

Add noodles to crockpot. Add more water if needed as well. Cook another 10-15 minutes until noodles are thoroughly cooked. I usually add more water after the noodles cook, but I like a lot of juice in my soups.

Especially yummy topped with shredded parmesan cheese.
