Kim's Grandma's Sweet Potato casserole

Introduction

My friend Kimberley gave me this recipe.. my only change was to replace part of the sugar called for with Splenda. My friend Kimberley gave me this recipe.. my only change was to replace part of the sugar called for with Splenda.
Number of Servings: 8

Ingredients

    1/2 c sugar
    1c granulated splenda
    1/2 c skim milk
    3c grated raw sweet potatoes
    1/2c butter
    3/4c buttermilk
    1/8 tsp baking soda
    1/2c pecans
    1/2 tsp cinnamon

Directions

Mix sugar, splenda and milk in large bowl; add potatoes.

In another bowl, combine egg beaters and butter, beat to combine. Add two mixtures together.

Add remaining ingredients and mix. Pour into a 2 quart casserole and bake at 450 for 1 hour.

Serving Size: not sure exactly, I figured 8 servings
