Bring beats and enough cold water to cover to boil in a large sauce pan. Reduce heat and simmer covered until fork tender, 40 to 45 minutes. When beets are cool enough to handle slip off skin (peel) and cup into pieces. Transfer beets to a 2 quart microwaveable casserole. In a sauce pan melt butter and add remaining ingredients, pour over beets and stir to coat. Dish can be made up to a day in advance, cover with plastic wrap and refrigerate. When ready to serve microwave on high until hot 3-4 minutes, stirring once halfway through.
