Roasted Chicken

Number of Servings: 5

Ingredients

    5 boneless skinless chicken breasts
    Spices of Choice
    1 TBSP butter
    4 cups Brussels Sprouts
    1 Onion
    2 Cups Cauliflower
    0.5 Cup of Chicken Stock
    3 Cups Sweet Potato (About 1 sweet potato)

Directions

1. Preheat oven to 375
2. Rinse and pat dry chicken
3. Place in large roasting pan or baking dish (can line with foil to make clean up easier)
4. Slice Brussels sprouts in half and slice onions into chunks and place around chicken (add cauliflower and sweet potatoes here too)
5. Rub the spices over the chicken (let sit a few hours if you have the time)
6. Sprinkle spices of choice on veggies
7. Place chicken and sweet potatoes into oven, pour in the chicken broth.
8. Roast 60-80 minutes until internal temp of 170 or more
9. Toss veggies several times during cooking and let sit 10 minutes
10. Serve
