Roasted veggies

Ingredients

    One green pepper
    One yellow pepper
    One med. onion
    Three garlic cloves
    One large zucchini
    One tablespoon of Extra Virgin Olive Oil

Directions

Preheat oven to 350 degrees.

Cut up all veggies into long, thing pieces. Place them in a large ziplock bag. Add the olive oil and shake bag. Place veggies in an oven safe dish with a lid. Place in the oven. After 20 minutes stir the veggies and place back in oven for another 20 minutes.

This is a healthy side dish... and it's so tasty. People who don't like veggies will appreciate how flaverful this in.

I serve this with lean chicken or turkey. It makes for a very yummy, low cal meal!
