Number of Servings: 1

Ingredients

    1.5 cups frozen spinach
    2 teaspoons lime juice
    0.25 teaspoon chili pepper, finely chopped

    1 tablespoon olive oil
    1 teaspoon cumin powder
    1 clove garlic, pressed

    1.5 cups non-fat cottage cheese

Directions

Place the spinach in the bowl of a food processor and let it thaw a bit. Add the lime juice and pepper and process the mixture.
Heat the olive oil in a skillet with garlic and cumin. Add the spinach mixture and the cottage cheese. Heat through and serve. Good with brown rice.

Serving Size: Makes 1 large or two smaller servings.
