This is a very healthy entree for breakfast. The eggs get fluffy so you end up with a large portion, but with few calories. This will help meet your protein needs for the day while still giving you a serving of veggies. This is a very healthy entree for breakfast. Ingredients

    Egg, fresh, 1 large
    Liquid Egg Whites 6 tbls
    Green Peppers .2 cup, diced
    Ripe Tomatoes, .2 cup, diced
    Onions, raw, .2 cup, diced
    Mushrooms, fresh, .2 cup, diced

Directions

Mix all ingredients together briskly and pour into an 8" non-stick skillet. Cook on medium-high for approx 5 minutes until bottom is light brown and it can flipped over in one piece. After flipping, cook 2nd side until eggs are desired firmness.
