Wanda's Lightened Up Hot Curry Shrimp

Ingredients

    1 can light coconut milk
    1 tablespoon hot curry paste
    1 tablespoon fish sauce
    1 pound shrimp, peeled
    10 ounces couscous
    1 tablespoon lime juice
    1 tablespoon cilantro

Directions

On medium low heat cook coconut milk, curry paste, fish sauce for eight minutes, stirring often. Add shrimp, cook until pink. Stir in couscous, remove from heat, cover and let sit 15 minutes. Stir in lime juice and cilantro and serve.
