Mashed Sweet Potatoes

Introduction

Ingredients

    4 large dark-orange sweet potatoes
    8 slices of bacon
    1 large onion, chopped
    1 tsp. ground thyme
    1/2 tsp. salt
    1/4 tsp. black pepper

Directions

1. Heat oven to 350F. Cut sweet potatoes in half and pierce with skin side with a fork. Place in greased cookie sheet skin side up. Bake about 45 minutes or until tender when pierced with a fork. Let stand for 10 minutes or until cool enough to hand.

2. In 10-inch skillet, cook bacon over medium-high heat 4 minutes, turning occasionally, until brown. Remove bacon from skillet; place on paper towels to drain. Reserve 1 tablespoon of drippings in skillet; discard remaining drippings. Add onion to skillet, cook over medium heat 5-8 minutes, stirring occasionally, until softened.

3. Peel sweet potatoes; place in large bowl. Mash until no lumps remain. Add thyme, salt and pepper; mash until very smooth.

4. Add onion to sweet potatoes. Crumble bacon; reserve 2 tablespoons for garnish. Add remaining bacon to potatoes; stir until blended. Garnish with reserved bacon.

Serving Size: makes 10 1/2 cup servings
