Grandmother's Pumpkin Pie

Introduction

My great-grandfather didn't approve of a pumpkin pie unless you could pick up a slice and eat it from your hand. Grandmother developed this super-dense pumpkin pie filling just for him, but it's my favorite too! Ingredients

    100% Pure Pumpkin Solid Pack whole #303 can
    Molasses, 1 cup
    Granulated Sugar, 3/4 cup
    Egg, fresh, 3 large
    Butter, salted, 1 tbsp
    Cinnamon, ground, 2 tsp
    Allspice, 1/4 tsp
    Nutmeg, ground, 1/2 tsp
    *Jiffy Pie Crust Mix, 1 box (makes two pie shells)

Tips

The original recipe called for sorghum rather than molasses, but I can seldom find it any more. If the molasses flavor is too strong for you, use the lightest flavor and substitute dark Karo syrup for half of it.


Directions

Set the milk in a saucepan to scald. Meanwhile, in a large mixing bowl, mix the can of pumpkin, the molasses, and the sugar. Beat in the three eggs.
When milk is hot, add the butter and stir, then stir milk mixture into the pumpkin mixture
Add spices and stir in.
Pour into two unbaked pie shells. I used the Jiffy pie crust mix for the nutritional info.

Serving Size: Makes two pies. Nutritional information is for serving of 1/8 of one pie.
