Introduction

for lasagna, pasta, ebly, rice.... great to freeze....... for lasagna, pasta, ebly, rice.... great to freeze.......
Number of Servings: 10

Ingredients

    Eggplant, fresh, 10 cup, cubes (remove)
    Zucchini, 10 cup, sliced (remove)
    Red Ripe Tomatoes, 5 cup cherry tomatoes (remove)
    Mushrooms, fresh, 5 cup, pieces or slices (remove)
    Canned Tomatoes, 5 cup (remove)
    Garlic, 10 cloves (remove)
    Basil, 50 leaves (remove)
    Olive Oil, 3 tbsp (remove)
    salt, pepper, sugar

Directions

cut all vegetables
in a big casserole, heat olive oil, add garlic + vegetables, let simmer for a while; add tomatoes and let simmer again; add basil
season with salt, pepper, a little bit of sugar, etc

Serving Size: makes 10 servings in 2-3 batches to freeze
