Ingredients
-
turkey, tortilla, cheese, sour cream, green peppers
Tips
Directions
Fry the tortillas lightly in peanut oil (can use vegetable, but peanut works best). Spread them on paper towels on top of newspaper to soak up excess oil.
Make mixture of the sour cream, chopped chiles. coat each tortilla with the sauce lightly (by dipping). Roll each up with some jack cheese, a whole green chile and some salsa. pack into pan one by one. You can also take leftover chicken for filling. Use the remaining sour cream sauce on the top with some salsa. spread some olives on the top with a little jack cheese and bake until done (about 1/2 hour at 350)-- with some aluminum foil on top for part of the cooking. You can also pre-make this, cover and freeze until ready to cook. Just make sure you defrost first and don't put fridge cold glass dish into hot oven.
serve with some green chile salsa, chopped lettuce and tomatoes, black beans.
