Introduction

Stew or chili (depending how much cumin you use) this dish is rib sticking with a yummy smokiness. I believe in slow food, and I cook this for 3 hours...pair with some greens and a salad for a great meal! Ingredients

    All ingredients used are organic...

    12 oz. Great Range Bison Steak, cut into bite size chunks
    3 strips Applegate organic bacon, cooked, chopped with drippings reserved
    .5 cup dry red kidney beans, rinsed
    1 medium onion, coarsely chopped
    2 medium carrots, peeled and sliced
    4 large fresh mushrooms, wiped clean + sliced
    .5 tbsp bacon drippings
    Splash of red wine
    8 oz.Water
    4 oz. organic tomato paste
    Cumin powder
    Cayenne pepper
    Ground black pepper




Directions

In a medium stock pot, brown bison in bacon drippings; reserve.
Carmelize onion, carrot and mushrooms in drippings; add meat, beans, bacon, tomato paste, water, wine, and spices; stir well and simmer, covered, over low heat for 1.5 hours.


Serving Size: Makes 3 4 oz servings
