Chunky vegetable soup

Ingredients

    Onions, raw, chopped, 2 medium
    Brussels sprouts, fresh, roughly chopped,1 cup
    Baby corn cobs, 1 cup
    Baby Carrots, raw, sliced,1 cup
    Snow Peas, fresh, 0.5 cup
    Potato, raw, roughly diced, 2 cups
    Parsnips, sliced, 1 cup
    Rice Noodles, 0.5 cup
    Mixed herbs, 1 tsp
    Black pepper to taste
    Vegetable stock cubes, low sodium, 2
    Water, 6 cups

Directions

Put all the ingredients in a pan, bring to the boil, then simmer for about 1 hour. Alternatively, put in a slowcooker and cook on low overnight.
