Moroccan Stew

Ingredients

    2 tsp. olive oil
    1 cup chopped onions
    1/2 cup diced celery
    1/2 cup diced green peppers
    1 clove garlic, chopped
    3 cups vegetable broth
    3 cups peeled, cubed sweet potatoes
    3 cups stewed tomatoes
    3 cups drained and rinsed garbanzo beans
    1 T lemon juice
    2 tsp. grated ginger root
    1 tsp. cumin
    1 tsp. curry powder
    1 tsp. coriander
    1 tsp. chili powder
    1/2 tsp. salt
    1/4 tsp. black pepper
    1/4 cup raisins
    2 T. peanut butter

Tips

Garnish with chopped fresh cilantro, chopped peanuts, and Greek yogurt or light sour cream.


Directions

Heat 2 tsp. olive oil over medium high heat. Add chopped onions, garlic, celery, and green pepper. Stir until vegetables begin to soften; about 3 -5 minutes.

Add all ingredients except raisins and peanut butter. Bring to a boil. Reduce heat to low and simmer, covered for about 20 minutes or until sweet potato cubes are soft.

Stir in raisins and peanut butter. Mix well and simmer for 5-10 minutes or until the peanut butter is dissolved.

Serving Size: makes 4 1 cup servings
