Did you know portabella mushrooms are high in protein? Well, marinate them, and stuff them with spinach and cheese for a tasty, protein-rich vegetarian meal.
Number of Servings: 2

Ingredients

    2 portabella mushrooms
    4 tbsp light balsamic vinaigrette
    2 tbsp shredded basil
    .5 cup shredded bok choy or fresh spinach
    .5 cup grated parmesan cheese
    .25 cup original dried bread crumbs
    .125 cup egg substitute

Directions

1. Marinate the mushrooms in the balsamic vinaigrette overnight in the fridge.
2. Prepare stuffing by shredding basil and bok choy or spinach. Add this to the parmesan cheese and bread crumbs. Mix together. If necessary, add egg substitute to hold it all together.
3. Remove mushrooms from the fridge and lay them out on a nonstick pan. Put half of the stuffing in each.
4. Bake stuffed mushrooms for 20 minutes at 350 degrees, serve, and enjoy.
