Gluten-Free Vegan Pancakes

Introduction

I made these in a desperate search for pancakes that I can eat (I am allergic to everything!) And I really love them! Add some agave syrup on top and I am in pig out heaven! Ingredients

    Dry Ingredients
    - 3/4 cup almond flour
    - 1/2 cup buckwheat flour
    1/2 C Arrowroot starch (or potato starch)
    - 1 tsp each baking soda & cream of tartar (OR 2 tsp Baking powder)

    Wet ingredients
    - 1/4 C Applesauce, unsweet (OR Sweet potato puree)
    - 2 TBSP Canola Oil
    - 1/2 Cup So Delicious Coconut Milk creamer

    Extra ingredients
    - 1/2 cup So Delicious Coconut Milk Creamer

Tips

I added other options next to the ingredients in parentheses. All are very good!

Try different flavor creamers for delicious flavor pancakes!


Directions

Mix dry ingredients in a bowl.

Mix wet ingredients in another bowl. Don't worry if it doesn't mix too well. It's not a big deal.

Pour wet ingredients into dry ingredients and mix well.

One TBSP or 2 at a time, add in more So Delicious Coconut Milk creamer and stir until it's a thickness you like. I like mine thin enough to pour from my measuring cup (and scrape out the rest with a spoon) and not much more.

Cook in a medium heat non-stick skillet (or a lightly greased cast iron skillet). Scoop into skillet 1/3 cup per pancake. Cover with a lid for a pot (this helps it cook better). After 2 minutes, flip the pancake and cover again with the pot lid.

It's done you put a toothpick (knife, fork, spatula corner) in the center and have it come out clean.

This is wonderful with a little bit of agave syrup!

Serving Size: Makes 6 pancakes with 1/3 cup batter each.
