HCG Chicken Eggplant Bake

Introduction

I modified one of our favorite recipes to make it more HCG friendly. It's still delicious! It does mix 2 veggies, so it is better for the Trudeau followers, not the Simeons. I modified one of our favorite recipes to make it more HCG friendly. It's still delicious! It does mix 2 veggies, so it is better for the Trudeau followers, not the Simeons.
Number of Servings: 4

Ingredients

    4- 3.5 oz chicken breast portions, diced or shredded
    1 eggplant, cubed
    1 can organic fire roasted diced tomatoes
    1 tsp minced garlic
    1 tbsp dried minced onions
    1/4 c water
    1 tbsp italian seasoning mix
    sea salt and pepper to taste




Tips


Directions

in skillet, sautee chicken in water with seasonings until cooked thoroughly.

Add eggplant and canned tomatoes and toss to mix.

Transfer to 13X9 pan and bake at 350 for about an hour, until eggplant is tender.

Serving Size: 4 servings, each with 1 vegetable (1/4 serving tomato and 3/4 eggplant) and 1 protein
