Quick Pumpkin Pancakes

Introduction

This recipe is made quicker by using a pre-made pancake mix. This recipe is made quicker by using a pre-made pancake mix.
Number of Servings: 3

Ingredients

    2/3 cup whole wheat pancake mix
    2/3 cup vanilla rice milk
    1/3 cup canned pumpkin
    1 tsp pumpkin pie spice
    2 tbsp Splenda baking sugar blend

Directions

Mix all the ingredients, spray cooking spray into pan, pour small amount of pancake batter into pan & swirl to spread. Cook each side until golden brown.
Makes 3 pancakes per serving, about 3 servings.

    Loved this. Froze the extras. A little gooey but I added more rice milk which made it easier to spread. Delicious with peanut butter and syrup on top. I'd make them again. - 7/6/09

    I bet that would make great Pancake Puffs! My kids are very fond of those; they made me buy the skillet, so I guess it won't hurt if I "hide" some vegetable in the picture, huh? LOL

    I am not allowed to eat breads on my current nutrition plan, but anything goes on my luxury days!
    I love pumpkin, so I will definitely try this!

  • Umm. What are the REAL carbs for this recipe? Somehow, 119.2g seems outrageous per serving. Doesn't add up anyway, with the ingredients listed. Correction needed? I can't go near this - if that is the case. Maybe 19.2g? - 10/5/13
