Easy Turkey Sausage Stir Fry

Introduction

Better (and cheaper!) than take-out. This one is SUPER easy! Add a can of rinsed baby corn and use up any fresh veggies you have on hand. Great served over brown rice. Ingredients

    1 Tbls. Canola Oil
    2 cloves garlic, minced
    1 large onion, sliced lengthwise
    2 green bell peppers, sliced thin
    2 large carrots, sliced thin
    1 can sliced water chestnuts
    1- 12oz. pkg. turkey smoked sausage, sliced
    4 Tbls. stir fry sauce

Directions

Heat a heavy non-stick skillet or wok on medium-high heat. Add the sausage and cook, moving continuously until heated through (approx. 3 minutes). Remove sausage from pan.

Return pan to heat, add garlic and cook, moving constantly, for 30 seconds. Add onion, bell pepper and carrot to pan. Stir-fry until just crisp tender (approx. 5 mins.). Add sausage back to pan. Pour stir-fry sauce over mixture and stir to combine. Turn off heat and cover briefly until heated through.

Yield: 6 servings
