Pasta Bake

Ingredients

1 lb pasta (uncooked)
2 c 2% shredded mozzarella cheese
5 T grated Parmesan cheese
3 small cans no-salt-added tomato sauce
24 oz frozen mixed vegetables (carrots, broccoli, cauliflower)
3 cloves garlic, minced
1/4 c onion, chopped
Italian seasoning to taste
Tips
Alternatively, use cheddar or cheddar/jack blend instead of mozzarella and Parmesan and add taco seasonings (cumin, oregano, chili powder, paprika) instead of Italian seasoning for a Mexican-inspired dish.
Directions
Preheat oven to 350F.
Cook pasta according to package directions.
Steam veggies in microwave or steamer.
Combine pasta, veggies, tomato sauce, garlic, onion, and Italian seasoning. Pour into 9 x 13 pan.
Sprinkle cheeses over the top and bake for 20 to 30 minutes or until cheese is light browned and bubbly. Let cool for 10 minutes to set cheese before serving.
Serving Size: makes 8 servings
