Home Style Turkey Soup (or chicken)

Number of Servings: 10

Ingredients

    12 c. low sodium chicken broth
    1 onion, chopped
    1 c. chopped celery
    4 carrots, peeled and sliced
    1/4 t. ground pepper
    1/3 c. pearl barley
    1 can (14 oz.) low sodium diced tomatoes
    1 can (16 oz.) white beans (kidney beans), rinsed and drained
    1 lb. light cooked turkey meat (or cooked chicken), cut into bite sized pieces

Directions

Combine all ingredients in a large stockpot. Bring to a simmer, and cook, covered for about 1 hour. Ladle into individual bowls and serve immediately. Freezes well.
