Horse Food Chicken Soup

Introduction

This recipe has two foods that are traditionally fed to horses: black-eye peas and oats! This soup has a little of everything and packs a lot of fiber! Number of Servings: 6

Ingredients

    1 T Olive Oil
    1 can Blackeye Peas
    1 cup Quick Cook Steel Cut Oats
    1/2 cup Onions, chopped
    1 T Garlic
    1/2 cup Celery, diced
    1/4 Fennel, sliced
    2 cups Frozen mixed vegetables (green beans, carrots, corn, and peas)
    1 Large Potato, chopped
    1 lb Chicken Thigh, quartered
    2 T Ground Cumin
    1 T Thyme, chopped
    2 T Black Pepper
    1 T Oregano, ground
    1 t Sage, ground
    1 T Paprika
    1 T Chili powder
    1 t Curry powder
    1 cup Chicken Broth Low Sodium
    1 cup Vegetable Broth
    1 T Salt
    4 cups water

Tips

add a teaspoon of lime juice to each serving for a perfect flavor.


Directions

1- heat large pan with olive oil, saute onions until golden, add garlic, chicken, and spices. Saute for 5-7 minutes, until chicken changes color.
2- add potato, frozen vegetables, celery, and fennel. Saute for 2-3 minutes.
3- add oats, broth, and water. add salt to taste and bring to boil. reduce heat and let cook for 20 minutes, covered, but stirring occasionally.
4- add beans and let cook for 10 minutes or until the soup reaches the thickness you desire (i like thin soups).

makes 6 servings. 1 serving= full soup bowl= 2 1/2 cups
