Greek chicken soup with wild rice

Number of Servings: 16

Ingredients

    Chicken Breast, no skin, 8 ounces
    Carrots, raw, 3 medium
    Celery, raw, 3 stalk, large (11"-12" long)
    Onions, raw, 0.5 cup, chopped
    Cream of Celery Soup, 300 grams
    Parsley, dried, 1 tbsp
    *Lemon Juice, 2 fl oz
    Water, tap, 3000 mL
    brown rice 1/4 cup

Tips

Makes 16 cups, but it's so low calorie you can have more than that in one serving.


Directions

in a 5 quart slow cooker add cubed chicken, sliced vegetables, soup and water. Cook on high for 4 hours, low for 8. Add rice 45 minutes before serving. Add salt, freshly ground pepper, parsley and lemon juice 5 minutes before serving. Enjoy!
