Thai Sweet Potato Pudding (3x3" square)

Introduction

From Nancie McDermott's Quick & Easy Thai for my family's logging purposes. I have omitted the fried shallot topping. From Nancie McDermott's Quick & Easy Thai for my family's logging purposes. I have omitted the fried shallot topping.
Number of Servings: 9

Ingredients

    3 large eggs
    1 c coconut milk
    1 1/4 c sugar
    1 1/4 c mashed cooked sweet potato

Directions

Heat oven to 400. Lightly grease 9x9" baking pan.
Mix eggs & coconut milk in a pan, add sugar, then sweet potato. Bring to gentle boil, cook about 5 minutes or until custard is slightly thickened & sugar is dissolved.
Add to lightly greased 9x9" pan, bake at 400F for 30-40 minutes.

Serving Size: Makes 9 3x3" servings
