Vegetable Barley Soup

Introduction

So warm and soothing, and full of the nutrients you need in the middle of winter! So warm and soothing, and full of the nutrients you need in the middle of winter!
Number of Servings: 16

Ingredients

    8 cups water
    1.5 cups dried barley
    1 cup diced carrots
    1 cup diced green beans
    1 cup diced celery
    1 cup diced onions
    1/2 cup finely shredded kale
    2-3 cloves garlic, finely diced
    1 can petite cut tomatoes
    Fresh rosemary, sage, parsley, and thyme to taste
    OPTIONAL: salt and pepper to taste

Directions

1. Combine barley and water in a large pot. Bring to a boil; boil 2-3 minutes and reduce to a simmer. Simmer 10 minutes.

2. Add onion, garlic, and carrots. Simmer another 10 minutes.

3. Add celery, green beans, kale, and fresh herbs. Stir very well. Simmer another 10 minutes.

4. Add tomatoes (optional: add juice from can rather than draining), and salt and pepper or dried herbs. Stir well; simmer covered over low heat for 25-30 minutes, until barley is tender.

Serving Size: Makes 16 servings of about 1 cup each
