Sue's Turkey Pot Pie

Introduction

You can easily substitute chicken for turkey. You can easily substitute chicken for turkey.
Number of Servings: 6

Ingredients

    Butter, whipped, 2 tbsp
    *All Purpose Flour, Trader Joe's unbleached: 1s=.25c/30g, 0.25 cup
    Chicken Broth - 99% Fat Free, 2 cups (low sodium, if you can find it)
    Turkey breast meat, 24 ounce(s)
    *Potato, raw, 1 large (3" to 4-1/4" dia.)
    *Onions, frozen, whole, .5 package (10 oz)
    Mixed Vegetables, frozen, 1 package (10 oz)
    Celery, raw, .25 cup, diced
    Pie crust, frozen, ready-to-bake, 1 crust, single 9"

Directions

Peel and partially cook the potato

Melt butter in a large saute pan
mix in floor to make a paste
add the broth and stir until smooth
add oinions and celery - stir 1 minute
cut potato into small cubes (1/4 in diam.)-add to the mix
add turkey
add veggies
stir

Pour all ingedients into a deep oven safe casserole dish
stretch the pie crust over the top
make 4 slits in the crust to prevent the pie from bubbling over

Serving Size: make 6 serving
