Vegan Mayonnaise Substitute

Introduction

An easy way to make vegan mayo for sandwiches or other cold uses. An easy way to make vegan mayo for sandwiches or other cold uses.
Number of Servings: 4

Ingredients

    1 ¾ cups lightly salted water
    8 oz. silken tofu
    2 tbsp lemon juice
    1/4 tsp salt
    1 tsp nutritional yeast

Directions

Bring the salted water to the boil, add the tofu and bring back to the boil.
Immediately remove from the heat and leave for 3 minutes.
Drain the partially cooked tofu.
Place it in a food processor together with the lemon juice, salt and nutritional yeast.
Process until smooth.
Refrigerate until ready to use. Do not re-cook!
