Quinoa with peas and carrots

Introduction

this is a nice change from eating rice or any other grain. Quinoa come in a red variety which makes it a great holiday dish! This recipe is tasty an just a little sweet. My kids love this dish (and 2 of them are picky!). It tastes good the second time around so it works to store. It also freezes well if you want to divide it up into individual servings and freeze. this is a nice change from eating rice or any other grain. Number of Servings: 10

Ingredients

    2 cups water
    1 cup Quinoa
    2 Tbs Olive oil
    1 large onion, chopped
    3 large cloves of garlic
    1 frozen bag of peas and carrots
    1 large lime, juiced

Tips

You can add a couple of Tbs. of water when you steam the peas and carrots. You can use any vegetable that you like. This is a very flexible recipe. You can cut the fat by sauteing the onions and garlic in chicken broth.


Directions

Place water in a medium pot and bring to a boil.
Put quinoa in water and put the lid on the pot, turn down to low.
Cook quinoa for about 20 minutes.
While the quinoa is cooking, get a skillet and put on med-high heat.
cook onions and garlic till soft.
Add peas and carrots, turn heat down to medium.
Put the lid on the skillet to steam the veggies.
When the quinoa is done, add to the skillet with the lime juice.
Toss everything to evenly distribute quinoa and lime juice.
